Crustless green peas and goat quiche is very famous is north African countries. The meat and eggs are almost always a requirement for any type of quiche unless it is a meatless grilled salad quiche. Green Peas & Goat Quiche Ingredients

  • 1/2 Tbsp of ground chili pepper
  • 3 Tbsp of olive oil
  • 100gr /4oz of mozzarella/cheddar cheese.
  • Salt
  • 250gr /9oz of goat/turkey meat cut in cubes.
  • 1/2 Tbsp of tomato paste.
  • 1kg /2.2lbs of green peas.
  • 1 minced onion.
  • 8 eggs
  • Black pepper

Preparation of Green Peas Quiche

  1. Number 1 Shell the green peas.
  2. Number 2 Place the shelled peas in a cooking pot, add water, a little salt, and black pepper, and then let it boil for 10 minutes or so.
  3. Number 3 Take the cooked peas out of the water and set it aside.
  4. Number 4 For the sauce; saute the goat meat and onion in a little oil and add salt and the black pepper as well as some water.
  5. Number 5 Add to the sauce the tomato paste, the ground chili pepper, and a little more of water and let it cook until the meat becomes tender. You might need to add some water to make sure the pot would not dry. Once the sauce is prepared, set it aside to cool down.
  6. Number 6 In a big bowl, whisk the 8 eggs.
  7. Number 7 Then add the cheese and the boiled peas to the egg mixture.
  8. Number 8 Then add the cooked sauce and mix all the ingredients.
  9. Number 9 Get the oven ready to 180C/356F and place the mixture in for 20 minutes or until the center becomes firm. Test it by inserting the knife into the center. 
Tip: When boiling the green peas, do not cover it in order to keep its original green shiny color.
This green peas and goat quiche is perfect for brunch or dinner and can be eaten hot or cold.
